The Simple Pleasure of a Simple Dinner

Sometimes there is nothing so pleasing as a simply prepared dinner and there’s just something about a steak dinner that makes you feel like you’re celebrating something—even if that something is Tuesday! Flank steak is a very lean red meat option and it lends itself well to braising or grilling. When I have the foresight, I marinate mine overnight as the steak will soak up all the delicious flavors of whatever it’s left to bathe in. If you forget to marinate the steak, you can always make the marinade and brush the steak with it while it’s grilling. While the flavor won’t be as rich, it will still be oh so goooooooood.

Simple Steak Dinner:
–1 to 1 1/2 lb. marinated flank steak
–Caprese salad
–grilled Brussels sprouts

To make the marinade mix equal parts:
–soy sauce
–worcestershire
–water
–lime juice
–tequila
–olive oil

and add:
–chili powder
–cumin
–black pepper
–garlic
Marinate the steak for 8-24 hours in a zip-top bag in the refrigerator. When ready to begin grilling, let the steak sit in the marinade for 10 minutes to bring it up to room temperature. Grill to desired done-ness (I like mine medium-rare!) and allow to rest a few minutes before slicing.

To grill the Brussels sprouts, toss them in olive oil and a pinch each of salt and pepper. Add to the grill and turn regularly to avoid charring.

Caprese salad is one of the most delicious and easiest things in the world to make. Slice up some tomatoes and top each tomato slice with a piece of fresh basil and a slice of fresh mozzarella. Drizzle with olive oil and balsamic vinegar and a pinch each of salt and pepper.
Now, doesn’t a nice Pinot Noir sound like the perfect compliment to this meal? Cheers!
